Cube the pineapple
In a pot, combine the water, sugar, and pineapple and mix well
Simmer over low heat, stirring occasionally, until the pineapple is tender and a syrup forms
Turn off the heat and add the lemon zest, then stir to combine
Let it cool, then blend in a blender, pour into a shallow container, and refrigerate until chilled
Beat with an electric mixer until smooth and creamy
Return to the freezer for about an hour before serving
