In a saucepan, combine the sugar and water
No heat, let it simmer until it reaches a fine syrup stage

Blend the watermelon, lime juice, and syrup in a blender
Pour into a warm mixture and stir well to combine with the syrup
Add the lime zest, let it cool, and refrigerate until it starts to thicken

Whip in an ice cream maker until it becomes frothy
Pour back into the freezer to harden completely
To serve, shave with an ice scoop and place in individual servings.
