Broth: Bring water and açúcar to a boil in a pot
Reduce heat and simmer for 10 minutes
Let cool
Sorbet: Dip tomatoes in boiling water for 8 seconds
Remove, peel, and seed
Blend with remaining ingredients in a blender until smooth, then strain through a fine-mesh sieve
Pour into a mold, cover, and refrigerate overnight
Beat again when firm to desired consistency
Pour into a mold, cover, and freeze for at least 3 hours or until firm.
