Fry the water with sugar to reach a soft-ball stage
Beat the egg whites until stiff peaks form
Melt the sugar syrup and slowly add it to the egg whites, beating constantly until thick and cool
Add vanilla extract
Beat heavy cream together with melted dark chocolate chips until stiff and fluffy
Fold in the egg mixture carefully.
