Bring the pineapple juice to a simmer in a saucepan, then let it boil for 5 minutes
Add 1-2 pieces of lime peel and continue to boil for another minute
Remove from heat
Melt the gelatin in the cold water and mix with the pineapple puree
Allow it to cool
Place it in the refrigerator for about 1 hour
Take it out, beat it well with a blender for 2 minutes.,
Add the egg whites and fold them into the mixture
Transfer the mixture to an airtight container, return it to the refrigerator until almost firm, then whip again with a wooden spoon for 30 seconds
Freeze it again
Store it covered in the refrigerator or freezer until ready to use
Serve cold.
