Whisk together the egg yolks and sugar in a bowl until pale and fluffy
Set aside
In a saucepan, bring 1/2 liter of water to a boil and add 150g of coffee grounds, whisking well
Remove from heat, cover, and let it steep for 1/2 hour
Meanwhile, in another saucepan, scald the milk and pour it over the egg yolk mixture, whisking until smooth and creamy
Pour this creme into the saucepan where the coffee is brewing
Add the brewed coffee to the creme and place the saucepan over low heat, stirring constantly
When it reaches the desired consistency, strain through a fine-mesh sieve into a large bowl and whisk until smooth
Chill in the refrigerator before freezing
