6 ounces of dark chocolate chips

2 cups whole milk

Heat the milk and heavy cream almost to a boil, then remove from heat
Add in the dark chocolate chips and let them melt
Beat the eggs with the sugar and vanilla extract until pale and fluffy
Add a little of the warm milk mixture to the egg mixture to temper it, then return everything to the pot
Cook, stirring constantly with a wooden spoon until the mixture thickens
The mixture is ready when it forms a film on the back of a spoon
Chill in the refrigerator until the mixture is cold
Process in an ice cream maker according to the manufacturer's instructions.
