1 envelope of unflavored gelatin

2 cups of fresh mango chunks or puree
1/2 cup of sugar
4 cups of natural yogurt (800g)

In a small bowl, sprinkle the gelatin over cold water
Stir slowly to dissolve it
Combine the mango, sugar, and yogurt in a blender
Blend until smooth and creamy
Add the dissolved gelatin
Pour into a 35 x 22 cm rectangular mold and refrigerate for at least an hour or until partially frozen
Transfer to a large bowl chilled in the refrigerator for 15 minutes
Blend with an electric mixer for 30 seconds, just until smooth without defrosting completely
Place in a container, cover with plastic wrap for about 2 hours in the freezer, until firm but not hard
Before serving, mix well or blend again
Yield: 14 servings.
