Use a ripe mango
Cut it in half, remove the seeds and pit, then cut into slices and puree or strain through a cheesecloth
Mix the pureed mango with sugar and lime juice
Soak the gelatin in cold water for 5 minutes, stirring constantly in a double boiler, then dissolve.,
Gradually add the mango mixture to the gelatin, stirring well
Place the mixture into an ice tray and put it in the freezer until firm
Remove the sorbet from the ice tray and stir well to make it creamier
Return the sorbet to the ice tray and put it back in the freezer to set.,
