In a large saucepan, combine all the ingredients and bring to a boil over high heat until it ferments
Reduce the heat and cook for 40 minutes, stirring occasionally to prevent scorching at the bottom of the pan
Check the consistency by placing some of the gelée on a plate
If it holds its shape, it's done
Incline the plate: the gelée should not slide off
Store in an airtight container, sterilized and refrigerated
