Wash the green corn well, removing any debris or fibers, and grate it coarsely
Mix 2 cups of grated green corn with 1 cup of milk and blend in a liquidizer
Add the remaining 2 cups and pass through a fine-mesh sieve or cheesecloth
Soak the bag in 1/2 cup of water and squeeze out any excess liquid
Heat the mixture over low heat, adding baking soda and stirring constantly
Let it simmer slightly, then add 2 whisked egg yolks
Return to heat until the mixture thickens, stirring constantly
Beat the egg whites until stiff with salt
Pour the cream into a container and mix well
Place in the freezer in the same vessel
When it starts to gel, beat again and transfer to popsicle molds
Use 2 small molds or 1 double mold
Note: - This recipe yields the most delicious application of green corn
