Cut the pineapple in half lengthwise, starting from the crown, leaving a little leaf on each half
Remove the pulp without damaging the skin
Let the halves drain with the leaves facing down
Discard the core and cut the pulp into small cubes
Place the pulp in a strainer and let it drain for 5 minutes
In a bowl, mix the drained pineapple with liqueur
Inside the pineapple skins, alternate layers of sorbet and chopped pineapple, ending with the pineapple
Cover with plastic wrap, refrigerate until the sorbet is firm
Remove at serving time and garnish with candied pineapple, if desired
