1 1/2 cups all-purpose flour (180 g)
1 tablespoon chopped green onion
1 tablespoon chopped parsley
1/2 teaspoon dried thyme

1/4 cup grated Parmesan cheese (30 g)

In a medium bowl, whisk together the egg, yolk, and water with a fork
Add the remaining ingredients, except for the butter and Parmesan cheese (reserve some of the herbs for sprinkling)
Mix until a sticky dough forms and set aside
In a large pot, bring 2 liters of water to a boil with 2 tablespoons of salt and let simmer
Divide the dough into three portions
On a cutting board, cut one portion into small strips using a spatula
Slide them into the boiling water and cook until they float to the surface
Remove with a slotted spoon and arrange on a serving platter over simmering water
Repeat the process with the remaining dough portions
In a small pan, melt the butter over medium heat and spread it over the dough
Add the Parmesan cheese, mix well, and transfer to a serving dish
Sprinkle with reserved herbs and serve immediately
