1 1/2 cups all-purpose flour (180 g)
1 tablespoon of finely chopped green onion
1 tablespoon of finely chopped parsley
1/2 teaspoon of thyme leaves
1/2 teaspoon of salt
1/3 cup of butter (65 g)
1/4 cup of grated Parmesan cheese (30 g)

In a medium bowl, whisk together the egg, white, and water with a fork
Add the remaining ingredients, except for the butter and Parmesan (reserve some herbs to sprinkle later)
Mix until a sticky dough forms and set aside
Bring 2 liters of water to a boil in a large pot with 2 tablespoons of salt
Let it simmer
Divide the dough into three portions
On a kitchen counter, cut one portion into small strips using a spatula
Slide them onto the boiling water and cook until they rise to the surface
Remove with a slotted spoon and arrange in a serving dish over hot water
Repeat the process with the remaining dough portions
In a small saucepan, melt the butter over medium heat and spread it on the dough
Add the Parmesan, mix well, and transfer to a baking dish
Sprinkle with reserved herbs and serve immediately
