In a large bowl, beat the eggs and then add the flour
Mix until the dough is homogeneous
Dissolve the salt in water and gradually add it to the dough to achieve a consistency suitable for passing through the spätzle maker

Fill three-quarters of a large pot with water, some oil, and salt to taste
Bring to a boil
Maintain a separate kettle with boiling water nearby to replenish the pot

Fill the spätzle maker with the dough and let it fall into the boiling water in small quantities
When the dough rises from the bottom of the pot, it is cooked
Remove each spätzle with a skimmer and place them on a plate
Repeat until all the dough has been used
Fry the onion in butter and reserve

Preheat the oven to a hot temperature
Assemble a serving dish by alternating layers of spätzle and grated Parmesan cheese
Top with the golden-brown onion and cover with aluminum foil for about 15 minutes
