1/4 cup of butter
120g of mushroom sliced into thin strips
2 tablespoons of finely chopped onion
1/2 teaspoon of chopped scallion greens
1/2 teaspoon of paprika
1 tablespoon of Worcestershire sauce
Salt and black pepper to taste
2 filet mignon steaks
1/4 cup of cognac
2 tablespoons of dry sherry or Madeira wine
1/4 cup of butter

Heat a skillet over medium-high heat
Melt the butter
Add the mushroom and onion
Cook for 5 minutes
Add the scallion greens, paprika, Worcestershire sauce, salt, and black pepper
Cook for an additional 5 minutes
Add the filet mignon steaks and cook to desired doneness
Flame the cognac in a separate pan until it ignites
When the flame dies out, add the dry sherry or Madeira wine
Simmer until the sauce is hot and bubbly
Serve.
