1 to 1.5 kg of veal shanks

Season the veal with salt, black pepper, and parsley
Heat the olive oil in a pressure cooker, add the onion and cook until it's soft
Add the veal and cook until it's browned
Add the tomatoes, water, and cover the pot
After boiling, simmer for 35 minutes
This recipe can be served with polenta or cooked sweet potato, sliced into wedges
Serves 5 to 6 people.
