These turkeys can be old. Clean, cut in half and season with vinaigrette. Place it to roast in a large roulade dish with plenty of fat. Let it fry for a bit, then add the vinaigrette sauce and cover the pan. Let it cook over low heat until tender. If needed, add water. When the turkeys are tender, drain some of the fat and put it in the pan: 4 peeled and quartered apples, 200g black plums without pits, add a splash of water and let it simmer for about 10 minutes more. Arrange everything on a serving dish, remove excess fat from the sauce and thicken with 1 tablespoon of wheat flour over the turkeys. Serve also with mashed potatoes or sweet potato mash.
