1/2 cup of cold water
1 teaspoon of salt
1 egg, lightly beaten
2 cups of all-purpose flour
3/4 teaspoon of salt
3/4 cup of cold butter or margarine, cut into small pieces
4 to 6 tablespoons of cold water
For the filling:
1 1/2 teaspoons of olive oil
1 cup of finely chopped onion
125 grams of ground beef
2 cloves of garlic, minced
2 teaspoons of ground cumin, toasted
1/4 teaspoon of paprika, sweet
1/4 teaspoon of grated ginger, or to taste
1/2 teaspoon of caraway seeds (optional)
1 medium-sized apple, peeled, seeded, and finely chopped
1/2 cup of cold water
1 teaspoon of salt
1 egg, lightly beaten
Makes the dough: In a medium bowl, combine the flour and salt
Add the cold butter or margarine, cut into small pieces, and mix with your fingers until it forms a crumbly mixture
Gradually add the cold water, mixing gently with a fork until the dough comes together in a ball
Divide the dough in half and shape each half into a ball
Wrap each ball in plastic wrap and refrigerate for 1 hour
Makes the filling: In a pan over medium heat, heat the olive oil
Add the onion, ground beef, garlic, cumin, paprika, ginger, caraway seeds (if using), and chopped apple
Cook until the onion is softened and the meat is browned, about 6 to 8 minutes
Add the cold water, salt, and beaten egg
Reduce heat to low and simmer for 20 minutes or until the filling is tender
Blend well until the filling forms a smooth paste
With a rolling pin, roll out each half of the dough on a floured surface to a thickness of about 1/4 inch (6 mm)
Cut into squares, about 7.5 cm per side
Place a spoonful of the filling in the center of each square
Fold the dough over the filling, forming a triangle shape
Mozzarella cheese and bake until golden brown.
