3 cups of water

1 cup of raw butternut squash
3/4 cup of grated Provolone or Parmesan cheese
4 tablespoons of butter or margarine
1 clove of garlic, minced
salt and black pepper to taste

2 egg whites beaten in snow

Bring the water and milk to a boil in a saucepan
Slowly add the squash
Cook, stirring frequently, until it's thick and smooth
Add the cheese, butter or margarine, and garlic
Season with salt and black pepper to taste
Let it cool
Add the egg yolks
Finally, carefully fold in the beaten egg whites
Pour into a buttered baking dish
Bake in a preheated oven (400°F) for 30 minutes or until puffed and golden brown
Serves 6 to 8 people
