To clean squid, rinse each one under cold running water. Hold the body firmly with one hand and pull the head and tentacles away from the body with the other hand. If you want to use the tentacles, cut them off at the head with a sharp knife just above the eyes and set aside. In this first operation, some of the innards will come out. Place your finger in the cavity of the body to remove any remaining contents. Also, remove the transparent cartilage that is located inside the body on one side (it looks like a plastic grommet). Make sure the body is clean by gently squeezing it, starting from the rear. For small squids, the simplest way is to turn them inside out to clean. Rub with your fingers, holding them under cold running water. Dry with paper towels. If desired, cut large squid into rectangles or rings.
