For the dough
2 cups all-purpose flour (240g)

1 pinch of salt

For the filling
2/3 cup all-purpose flour
6 tablespoons unsalted butter
9 tart green apples, peeled and sliced (1.5 kg)
4 tablespoons lemon juice
1/2 teaspoon ground cinnamon
1/2 cup white grape seeds
1/4 cup coarsely chopped nuts
3 tablespoons sugar

Prepare the dough: combine flour in a bowl
Mold a depression in the center and add egg, salt, and oil
Add water gradually, mixing with circular motions from the center outwards
Place on a smooth surface and work the dough until it comes off your hands
Transfer to a floured surface, spinning the dough to coat evenly
Cover with a cloth and let rest for 25 minutes
Prepare the filling: toast flour in butter and let cool
Peeled apples, remove seeds, and slice thinly
Mix with lemon juice, cinnamon, raisins, and nuts
Cut the dough in half and place one part on a floured surface
Press gently with fingers before opening
With the help of a rolling pin, roll out the dough as finely as possible, giving it a rectangular shape
Then, carefully stretch the dough with floured hands until it reaches its regular form
Spread half of the breadcrumbs on top and distribute the filling over that, leaving a 5-centimeter border around all sides
Dust with part of the confectioner's sugar
Fold the lower edge of the dough over the filling and then the sides
With the help of the cloth, roll like a roulade
Place in a greased baking dish and brush with butter
Repeat the process with the other half of the dough
Bake at 180°C (preheated oven) for 25 minutes or until lightly browned
Baste two or three times with butter while still baking
Remove from the oven, dust with confectioner's sugar, and cut into thick slices.
