In a small saucepan, bring the water to a boil over high heat (about 5 minutes)
Tie off the heat, add the packets of sweet herb extract, cover and let it rest for about 5 minutes
Discard the packets of sweet herb extract
Pour the mixture into a jug and reserve in the refrigerator for about 1 hour
Puree the beetroot using a centrifuge to extract the juice (should yield 2 cups or 480 ml)
Add the cold mixture, add sugar and mix well
Serve immediately
