Beat the yolks. Reserve
Melt the butter and mix with the flour
Add the heavy cream and cook while stirring until thickened
Combine the sweet potatoes, onion, salt, and pepper; quickly add the beaten yolks
Beat the egg whites until frothy and add to the mixture
Pour into a 1 1/2 quart refractory dish
Bake in a moderate oven (150°C) for 30 minutes
Let it stand for 4 hours.
