Melt the butter, combine with flour and salt
Add the milk gradually; cook slowly until thickened, stirring constantly
Beat the whites, then add to the milk mixture, along with the carrots and mix well
Beat the yolks until firm and add to the previous mixture
Pour into a greased mold and bake in a moderate oven for 40-50 minutes
Let it rest for 5 minutes.
