salt to taste (but not excessive)

Wash the spinach and reserve 5 stalks for garnish
Chop the remaining spinach
Dissolve the flour in 1 or 2 tablespoons of skim milk and place it in a medium saucepan
Gradually add the remaining milk, stirring constantly
Add the onion and salt
Cook, stirring constantly, until the soup thickens slightly, and simmer for 1 minute
Remove from heat, add the spinach, and serve immediately
If desired, puree the soup using a blender or food processor
Garnish with reserved spinach leaves
