350 g of cod, desalted and flaked

Bell Pepper Coulis
3 red bell peppers, seeded and peeled
2 tablespoons of olive oil
2 tablespoons of fish stock
Salt and black pepper to taste

Cook the cod in milk for 7 minutes approximately
Drain, reserve the milk, and put the cod in a blender
Add the olive oil, two tablespoons of milk, and blend until a paste forms
If necessary, add more milk
Transfer to a bowl and mix in the potato puree
Mix well and season with salt and black pepper
Sprinkle with chives and stir again. Reserve
For the coulis, blend all the ingredients in a blender
Strain, adjust the seasoning, and serve the cod in individual plates accompanied by the bell pepper coulis and green leaves.
