Wash the green scallions well and soak them in water with vinegar for 20 minutes
Drain and chop into fine slivers. Reserve
Drain the sardine fillets and mix with light mayonnaise to obtain a smooth pâté, without lumps
Add the green scallions and mix delicately, so that the slivers don't break apart. Reserve
Place 1 curly lettuce leaf on top of the rye bread slice and, above it, spoon a generous helping of pâté
Do not cover the sandwich
Place it on a plate
Arrange tomato slices to one side, with another lettuce leaf on top, and drizzle a drop of mayonnaise or pâté in the center of each slice.
