How to make the fritters
Wash and dry well
Dredge in a mixture of flour, salt, and pepper
Heat the oil (should be about 1 cm deep)
Place the number of fritters that will fit, side by side
Cover the pan and let fry over low heat for 20 minutes or until golden brown
Flip the pieces and fry for another 20 minutes or until golden brown on the other side
Remove the pieces and add more oil if necessary
How to make the Orange Marmalade
Mix all ingredients, heat to a simmer
Reduce heat and cook slowly until the marmalade has melted
Serve cold
How to make the Tomato Sauce
Mix all ingredients, bring to a boil and then simmer, stirring constantly, for 5 minutes or until the vegetables are tender
Serve cold.
