Preheat the oven to (350°F)
Prepare the dough
Melt the butter or margarine in a saucepan
Add the flour
Gradually add the hot milk, stirring constantly until it thickens
Season with salt and black pepper
Cook for 10 minutes, stirring occasionally
Add the shredded or grated cheese and let it melt for a few more minutes
Add the egg yolks one at a time, beating well after each addition
Remove from heat
Beat the egg whites until frothy and fold them gently into the mixture
Grease a soufflé dish
Pour the mixture into the dish and bake in the preheated oven for about 40 minutes or until puffed and golden brown, then serve.
