Grease a 21 cm soufflé dish with butter
Spread the gelée over half of the dish bottom. Reserve
Beat the eggs and sugar in an electric mixer until smooth and creamy
Mix in the grated lime rind and wheat flour, beating just to combine
Beat the egg whites until stiff peaks form, then add lime juice and continue beating until stiff
Gently fold the egg mixture with the previous one
Place half of the soufflé mixture in the dish without gelée
Melt the chocolate chips into the remaining soufflé mixture and place over the gelée
Bake the soufflé in a preheated oven at 220°C for 7 to 10 minutes or until it rises and the surface is golden
Serve immediately
