3 cups of chopped chayote
1 cup of water
4 tablespoons of olive oil

2 tablespoons of bread crumb

Cook the chayote in salted water until it's tender but still firm, then drain and reserve
Heat the olive oil and sauté the onion and tomato until they're soft
Beat the egg yolks and mix with grated cheese
Add this mixture to the cooked chayote, stir, and season with salt
Let it cool and incorporate the beaten egg whites
Pour into individual buttered and breaded molds, then bake in a medium oven until golden brown.
