Place the water in a large bowl
Add the yeast
Let the yeast dissolve
Combine the sugar and salt
Add 2 cups of wheat flour and mix until a smooth dough forms
Add enough flour to obtain a soft dough
Knead the dough on a lightly floured surface for about 5 minutes, using only as much flour as necessary to prevent sticking
Shape into a round loaf, place in an oiled bowl, cover with plastic wrap, and let rise in a warm, draft-free area for 1 hour
Knock down the dough and shape into a rectangular loaf, place in an oiled baking dish, cover with a clean cloth, and let rise again for 45 minutes
Poke the top of the loaf with a fork, brush with cold water, and bake in a preheated oven at 200°C (quente) for 40 minutes, brushing with water every few minutes
Remove from the oven and let cool completely
