1 cup fine wheat berries, rinsed and drained
4 medium-sized tomatoes, cut into small cubes
1 medium-sized cucumber, peeled and grated
1 small onion, thinly sliced
2 green scallions, chopped
1 large handful of fresh parsley, chopped
1/2 cup olive oil
1/2 teaspoon black pepper
Salt to taste
Vinegar or lemon juice to taste

Grate the cucumber, onion, scallions, parsley, and herbs finely
Cut the tomatoes into small cubes
Wash and rinse the wheat berries, soaking them in water for 15 minutes
After soaking, drain the wheat berries well and squeeze out excess water
Mix all ingredients together and season with a vinaigrette dressing
Serve on a platter lined with two or three layers of fresh parsley leaves, preferably using Roman leaf patterns
The wheat berries will almost blend in with the surrounding vegetables.
