Preheat the oven to 350°F (medium)
Baste the bottom of a small baking dish with butter and arrange the papaya slices side by side
Dust the papaya slices with sugar using a sifter
Let it bake in the preheated oven until golden brown (about 40 minutes)
Let it cool
Cut the papaya slices in half
Place one scoop of sorbet on each tart and, alongside, arrange the papaya halves
Serve immediately
