Make the guava lime juice: combine the ingredients in a saucepan and cook over low heat, stirring constantly, for 3 minutes after it comes to a boil
Remove from heat and transfer the saucepan to an ice bath
After it cools, cover the surface with plastic wrap and refrigerate
Cream the heavy cream until it forms stiff peaks
Layer individual servings with alternating layers of drained guava, guava lime juice, and whipped cream
Serve chilled, garnished with grated lime zest.
