3 cups of water

1/2 cup of concentrated orange juice, without pulp and thawed
4 tablespoons of papaya puree

Combine the water, sugar, and lime zest in a stainless steel or enamel-coated saucepan
Bring to a boil
Remove from heat and let cool
Place the mixture, concentrated orange juice, and papaya puree in a blender or food processor
Blend well
Pour into a glass or metal mold and freeze until firm
Stir every 8 hours
Remove from freezer about 30 minutes before serving to prevent it from becoming too hard
