Cook the hot water in a saucepan
Add the grated lemon peel and to taste
Cover the saucepan and cook over low heat for 3 minutes
Remove from heat and add the lemon juice and cold water
Add the evaporated milk, stirring carefully (the mixture will thicken slightly)
Cool to remove the lemon peel
Put in the freezer until it's almost firm
Remove the sorbet from the container and place it in a large, chilled bowl
Break the sorbet into pieces with a fork
After beating to obtain a creamy consistency
Immediately put it in the freezer to freeze until it becomes firm
Serve in 8 portions (children can eat 2 portions)
