Combine all ingredients in a pot and cook for 20 minutes
Strain and place the mixture on an ice bed
Place it in the freezer to partially freeze for 20 minutes
Stir well with a spoon
Put it back in the freezer and stir again
Freeze until firm
Scrape, portion into tart shells, and garnish with 1 lime pith and basil leaves
Serve as an appetizer for approximately 4 servings.
