The basil gives a very special flavor to the pesto sauce. 1 cup of olive oil or vegetable oil, 2 cloves of garlic, 3 tablespoons of chopped nuts, 2 cups of basil leaves, salt and pepper to taste, 1 cup of grated Parmesan cheese, 1/2 pound of tagliarini pasta
The basil gives a very special flavor to the pesto sauce. 1 cup of olive oil or vegetable oil, 2 cloves of garlic, 3 tablespoons of chopped nuts, 2 cups of basil leaves, salt and pepper to taste, 1 cup of grated Parmesan cheese, 1/2 pound of tagliarini pasta
Place the olive oil and garlic in a blender
Blend very well, without stopping, remove the internal lid of the blender and add the nuts gradually, blending until smooth
Add the basil leaves gradually, blending constantly
Finally, add the grated Parmesan cheese, stopping the blender occasionally to mix the sauce with a small plastic or rubber spatula
Season to taste with salt and pepper
Cook the pasta as usual
Drain, reserving 2 tablespoons of water, place in a large serving dish, and pour the sauce over it
Mix lightly with the reserved water, using two forks
If desired, serve with additional grated Parmesan cheese
Serve 6 portions.
