In a large pot, place the water and season with salt
Cover and boil at high heat
Reduce heat to medium, add spinach and cook for about 5 minutes, or until al dente
Drain and reserve
In a medium pan, combine oil, garlic, and sauté over medium heat, stirring occasionally, for about 2 minutes
When the garlic starts to brown slightly, add the reserved spinach, salt, and pepper
Mix well
Remove from heat, add parsley, and mix again
Transfer to a serving dish and serve.
