1 cup of tapioca
9 tablespoons of water
300g of coalho or minas cheese, ralado
10 nanicas bananas
10 tapioca rolls (see recipe on page 62)

Peel the bananas and cut them in half lengthwise
Heat the tapioca in a frying pan over medium heat until it starts to caramelize
Gradually add the banana and water, stirring constantly, until the caramel forms
Let it simmer for 1 minute and then remove from heat
Assembly
Arrange each tapioca roll on a plate
Place a portion of cheese on top, followed by two slices of banana and a drizzle of caramel sauce
Serve immediately
