In a large bowl, place the tapioca starch, adding water gradually to form ropes and sift through a fine-mesh sieve, pressing with your fingers or a spoon
Without stirring, place 2-3 tablespoons of the tapioca mixture in a medium non-stick skillet
Spread it delicately to form a pancake
Stuffing: Put the pineapple chunks in a pan with 3 tablespoons of water
Bring to low heat until softened, stirring occasionally and leaving some chunky bits
Grate the Minas cheese on the coarse side
Place a layer of pineapple over the tapioca still in the skillet
