Place the grated cheese in a 30 cm diameter baking dish
Melt the butter and mix with some of the grated cheese over low heat
Add the sliced apples, cover the dish, and cook for 15 minutes, stirring occasionally
Remove from heat and let cool completely
For the crust: Mix flour, yeast, and cold butter in small pieces until it forms a coarse crumbly texture
Pour the mixture onto a surface and form a depression in the center
Add 5 tablespoons of water
Mix well, allowing the dough to fall into the center and forming a ball
Knead and let rest for as long as the apples are cooling in the dish
Preheat oven to 230°C (hot)
Open the dough to the size of the baking dish and place it over the apples, pressing the edges
Mold an opening of 2 cm in the center of the dough, allowing steam to escape while baking
Bake for 30 minutes or until the crust is golden brown
Remove from oven, let cool, and unmold
Serving warm or at room temperature with a scoop of vanilla ice cream
