1 tablespoon fresh ginger, grated
1/2 cup pepper sauce
1 kg fresh plum without pit, cut into slices
4 cloves garlic, mashed
1 tenderloin (2.5 kg)

1.In a saucepan, combine all the ingredients except the tenderloin and cook over medium heat, stirring occasionally, for 20 minutes or until the plum is soft
Remove and blend in a blender until smooth

Preheat the oven to medium temperature
Place the tenderloin on the baking sheet and make parallel cuts across its entire length without separating the slices
Baste with half of the sauce and bake for 40 minutes or until it's warm and ready to serve
Remove and serve warm or at room temperature, with the remaining sauce served on the side and decorated with fresh plum slices.
