1 cup of cooked and cleaned camarão (preferably small)
2 hard-boiled eggs, chopped
1 1/2 cups of raw carrot grated
1 tablespoon of green onion finely chopped
1/2 cup of mayonnaise
2 tablespoons of lemon juice
1/2 teaspoon of mustard
salt and pepper to taste
2 or 3 large tomatoes or 4 to 6 medium-sized ones

Combine the camarão with the eggs, carrot, and green onion
In a small bowl, mix together the mayonnaise, lemon juice, and mustard; add the camarão mixture and stir well until everything is well mixed
Check the seasoning
Pit the tomatoes and cut them into thick slices
Arrange one or two slices on lettuce leaves and top each with a bit of the camarão mixture
If desired, garnish with additional camarões
Serve 4 to 6 portions.
