4 halved tomatoes
salt and pepper to taste
2 tablespoons of breadcrumbs mixed with butter
2 tablespoons of butter
1/2 teaspoon of mustard
a few drops of hot sauce
2 tablespoons of English sauce
1 1/2 tablespoons of vinegar
1 dash of cayenne pepper
1 egg yolk
4 halved tomatoes

Place the tomato halves on a baking sheet, with the cut side facing up; if you don't want to stop at that point, cut off a small piece from the bottom
Lightly sprinkle with salt and pepper and with breadcrumbs mixed with butter
Melt the butter in a small saucepan
Add the mustard, hot sauce, English sauce, cayenne pepper, vinegar, and a pinch of salt
Let it simmer
Beat the egg yolk and add a little bit from the saucepan mixture
Place it in the saucepan, cook over low heat, stirring until thickened
Put the tomatoes in the oven until the breadcrumbs are golden brown
Serve with a spoonful of the condimented sauce on each tomato half
