6 slices of bacon
2 1/2 cups of cooked potatoes, cut into small cubes
2 hard-boiled eggs, diced
1/4 cup of grated onion
1 tablespoon of chopped fresh parsley
1 red bell pepper in brine, cut into strips
salt and pepper to taste
1/2 cup of mayonnaise
2 tablespoons of lemon juice
2 small avocados, peeled and cut into small cubes

Cook the bacon slices until crispy
Drain the bacon on paper towels
Crush the bacon and place it in a bowl
Add the still-warm potatoes, eggs, onion, parsley, and red bell pepper
Season to taste with salt and pepper, and gently mix everything together
Cover and refrigerate for 1 hour
In a small bowl, mix the mayonnaise with lemon juice and add it to the salad
Add the avocado and gently mix.
