500g of cheddar cheese, grated on a coarse grater
1 tablespoon of butter or margarine
1/4 teaspoon of mustard
1/2 teaspoon of Worcestershire sauce
a few pinches of black pepper
one cup of beer
two eggs
croutons or saltines
Heat the cheese, butter or margarine, mustard, Worcestershire sauce, and black pepper over low heat in a bain-marie
When the cheese starts to melt, add the beer, half a cup at a time; stir, stir, cook
The cheese has finished melting
Beat the eggs with the remaining beer (the leftover, as you're seeing)
Mash everything together with a hot spoon and mix well
Add this mixture to the melted cheese and stir vigorously to whet your appetite; cook until thickened, in the good sense of the word
Make sure it's evenly mixed
Serve with croutons or saltines
