Pork Rinds

Pork Rinds
In a large pot, combine all the pork rind ingredients
Bring to a boil at high heat until the water evaporates
Then fry in the grease that forms, stirring occasionally until the pork is well browned
Remove with a skimmer and let it drain on paper towels
Rice
Moisten the rice with seasoned water and place it in a steamer pot
Bring to a boil, then reduce heat and steam for 40 minutes
Heat the oil well and fry the garlic until golden
Add the cooked rice and stir-fry for 2 minutes
Remove from heat and combine with the pork rinds
Collard Greens
Heat the olive oil in a skillet and bring to high heat
When hot, add the garlic and fry until golden
Add the collard greens and stir until wilted
Season with salt and serve still warm with the pork rinds and rice.
